Okay, so these don’t look like vegetables.  They don’t taste like vegetables.  But that’s kind of the idea.  See, these muffins have a nice, healthy serving of pureed sweet potatoes in them.  Not to mention, raisins, oatmeal, and chia seeds.  Chocked full of goodness– and my kids are none the wiser for it.  They just think they’re lucky to have a muffin-making-mom!  Score!

Got my recipe from Kate in the Kitchen.  My only change was that I substituted the chia seed for the flaxseed.  Neither is really necessary to the recipe, but why not get some extra goodness in there when you can?
